It is widely used in the Caribbean and Central America. It is ideal for batches with low to moderate alcohol potential. This yeast strain is very resilient when working in adverse environments. Its nutrient requirements are limited. It can operate in a variety of environments. For example, it enables odorless sugar fermentation, and the character of the raw material is clearly expressed.

First method (recommended): Rehydrate the product in ten times the volume of water at 25-35°C in a wide container. The entire surface of the water should be covered with a thin layer of yeast. Let it rest for 20 minutes. Stir gently, avoiding lumps. Slowly double the volume by gradually adding the starter from the container. This will lower the temperature. Wait 10 minutes. Mix the hydrated yeast thoroughly in the starter. The temperature difference between the must to be inoculated and the rehydration medium should never exceed 5°C.
Second method (quick method): The contents of one sachet are placed in the fermentation container with the mixture at a temperature of 20-30°C and mixed.
