Description: Citric acid is found in a wide variety of fruits and vegetables, but is most abundant in lemons and limes, where it can make up to 8% of the dry weight of the fruit.
Citric acid is also the most commonly used organic acidifier, probably because it is classified as a weak acid. As with all manufacturing processes, we recommend laboratory-scale testing to determine appropriate quantities. Typically, the product is titrated with a dilute citric acid solution (10 or 20% in water) until the desired pH is reached.
Citric acid is an alpha hydroxy acid and therefore has some exfoliating properties, although these are much weaker than glycolic, lactic, and malic acids.
Due to its sour (acidic) taste, it is a natural preservative for foods and soft drinks. In biochemistry, it is important as an intermediate in the citric acid cycle and is therefore present in the metabolism of almost all living organisms. It also acts as an antioxidant.
