  • This yeast strain is specifically used for the production of top-fermented wheat beers. It produces a flavor and aroma profile typical of wheat beers, with fruity estery ("banana") and phenolic ("clove") notes. The yeast imparts a high degree of drinkability to the beer and is characterized by good suspension behavior.
  • RECOMMENDED STARTING TEMPERATURE: 12-25°C (53.6-77°F) ideally 18-24°C (64.4-75.2°F)
  • DIRECTIONS: Before pitching, rehydrate the yeast in sterile water or sterile wort at 27ºC ± 3ºC. To do this, measure the liquid so that it is approximately ten times the weight of the yeast. Sprinkle the yeast onto the surface of the liquid and stir gently until the mixture becomes creamy. Then let the yeast slurry rest for another 30 minutes. The yeast is then ready to pitch in the fermentation vessel.
