  • This widely used British ale yeast strain is characterized by rapid fermentation and excellent settling properties, which contribute to good beer clarification. The yeast can be used in almost any top-fermented beer and is particularly suitable for fermentations in cylindroconical fermenters and for secondary fermentation in barrels.
  • RECOMMENDED STARTING TEMPERATURE: 12-25°C (53.6-77°F) ideally 15-20°C (59-68°F)
  • DIRECTIONS: Before pitching, rehydrate the yeast in sterile water or sterile wort at 27ºC ± 3ºC. To do this, measure the liquid so that it is approximately ten times the weight of the yeast. Sprinkle the yeast onto the surface of the liquid and stir gently until the mixture becomes creamy. Then let the yeast slurry rest for another 30 minutes. The yeast is then ready to pitch in the fermentation vessel.
